I am curious to know what additional dinner dishes you'd prepare to go with this fantastic side/salad? Asian influences? I wonder if grilled chicken could make this more a meal? Per usual, another hit!
This helped me make the best dinner I’ve made in a while AND use up a bunch of garden produce: charred flour tortilla, generous spread of the eggplant dip, lemon pepper chicken, peppers and onions, and an avo tomato salad on top. YUM.

We made the strawberry margs, the pimento corn dip and the Mac and cheese for our 4th of July! The corn dip was my favorite - we devoured it!!
