My mom (on the east coast!) and I (from Carmel!) drank wine and made the al pastor enchiladas over the phone together, pretending to be in the kitchen side by side. My little California beast and sweet Connecticut nephews FaceTimed as they shared a bicoastal dinner!
The plan is for each person in my house (4 of us) to pick one recipe per week and then I add on one from your Substack. So far I have made the pesto meatballs, harissa chicken, and turkey patties with cauli mash & spinach. All have been 10/10. Tonight it’s the risotto (my husband’s pick). My new favorite thing is to beat the estimated time for the recipe. It’s like arriving somewhere before my gps says I will.
I made the Cheater Chicken Tinga Tostadas and they sent me off on a 4-day What To Cook tear!! My husband asked if this cookbook was our life now, and the answer is yes
This isn’t on the list, but last night I made the cheesy beans and rice (page 112) as the first recipe and it was so easy and so good. We served with tortilla chips, which made my 4 year old very happy!
Me too, Maggie! It was SO good and so simple to make. Never would have thought to put everything in one pot but won’t do it any other way. Excited to keep going through the book!
The very first one I made was the spicy ramen and snap peas stir fry (but left out most of the spice bc kids) bc I was desperate and needed a fast dinner - and everyone loved it, and it was truly 15 min or less and you are a wizard.
Hi Caroline!! I know this isn’t the point of this thread and there’s a million things going on for you right now, but I just had to let you know that I’ve had some ongoing medical trauma/crises over the past few months, and a side effect has been that nothing tastes right *or* good, and it’s been really difficult for me to eat and help my body that way. Anyway, tonight we had “one-skillet roasted chicken and peaches with pesto rice” that I pulled from this post, and IT TASTED GOOD TO ME WHEN I TOOK A BITE. I of course started weeping, relieved, hopeful — whatever happens next with everything going on, I wanted to let you know that tonight, that meal brought back a little of myself (and one of my favorite things, food) to me tonight. 💕
Ok - I actually cooked the first recipe first - rib eyes and swiss chard (can't go wrong with steak and greens imo) but, I might have to make an argument for making pork chops with plums and polenta first because it is SO FREAKING GOOD and took me way less than 45 minutes to cook (I have never cooked a recipe in less than the estimated time.. ) and everyone licked the plate clean. Make the pork chops and plums first!!! It is super easy, super fast, super delish - everything we are looking for in a WTC recipe ❤️
My kids call the sauce from the sheet pan sliders their “secret sauce” and tell everyone about it, make it at school, etc. They closely guard the recipe and everything 🤣
Oh what a list! We made the any fish with saffron cherry tomatoes and it was easy peasy but felt like such a treat. Serving with warmed up pita was an excellent idea. This book is such a gift!
Grilled flank steak with charred corn panzanella is going to be on repeat for the next few weeks! I'm also planning to make and bring a big batch of the charred corn salad to a picnic this weekend because it's just that good.
I made the Dilly Chopped Salad with a side of grilled chicken! Amazing! But let’s be honest, my meal plan this week and next week is all from the book! So nice meeting you in DC!

I made Coconut Curry Chicken Meatballs & Veggies and my “I don’t use recipes” husband didn’t say a single thing to me during the entirety of dinner.
Then, after licking his *second* plate clean, looks me in the eyes and says “Damn. Okay. That was insane.”
