Didn’t see this one coming together but trusted our bestie and it was a home run. Used curry powder because *someone* in my house used il the garam masala and didn’t add it to the list (😂) and it was delicious! Even my 5 year old scarfed it up.

yes! and if it feels too wet, just add a few more breadcrumbs.

We made this last night. My husband and I loved it. Our 11 month old also loved the meatballs (his big brother still will not eat meat except for breakfast sausage and occasional bacon, so this was a HUGE win for our family). And, I got to have the glorious experience of rocking a baby with meatball burps to sleep, which may be the cutest thing ever.

Hi! Made this tonight and absolutely knocked out socks off. I used a rice cooker instead of tossing the cobs in or adding extra water, I actually stepped the cobs in simmering water for 15 min while I prepped meatballs and sauce and herbs then used that water I boiled the cobs in as the water in the rice cooker. Took no extra time and it was DELICIOUS.

If I want to scale up the rice to like 2 cups should I double everything for the rice? I only bought 4 corn cobs lol 😭

It'll be delicious with that amount of corn! But yes, double the butter. Taste with just one lemon and add more if you like more lemon flavor.

So to confirm the corn is cut off the cob before cooking?

Yes! The spent cobs cook with the rice the entire time. The kernels get added for the last 5 minutes.

Folks that used frozen corn - how much frozen corn did you use, and did you still add the extra water?

Here’s another riff on this already perfect recipe:

Use the Trader Joe’s elote seasoning and lime in the rice/corn.

Put chicken breast in your ip and cook on high for ten minutes with a jar of your fav red enchilada sauce (we like siete)

Shred the chicken and then make bowls. Top with chopped bells, cilantro, cotija, green onions and avo.

I can’t wait to make this!!!!! Caro blew my mind with the herb stem tip. Important question: can I do the rice in the rice cooker by adding the extra water and corn cobs?

yes, definitely!! can you open it with 5 minutes left to add the corn kernels?

Unfortunately there’s no timer on it, but what I could do is pop the corn in when the rice is done and let it continue on its warm function which provides a pretty good amount of heat. I’ll report back 🥴🤪

I just posted about this but I simmered the cobs in water for a while first then used that water in my rice cooker and it worked beautifully

Delicious and super easy! Did not have garam masala, just skipped it. Added parmesan to the ball mixture and used part turkey/part beef. Used basil and chives for the herbs. they ended up needing 18 mins in the oven instead of 10, maybe I made them too large? I used a regular size ice cream scooper to make the balls. Used plain greek yogurt instead of sour cream for the sauce, thanks for the substitution suggestions as usual, greatly appreciated. Plus I told a new mom-friend about you today, Caroline! Yay! “what to cook when you don’t feel like cooking” has been a life saver for our family the last few years, thank you = )

LOVE these subs!!! Beef takes longer to cook which explains the extra time! YUM.
