When I saw Caro posting about this on IG prior to sending it out, I was so excited bc I’d been wanting to make a pumpkin pasta for a while! I told my boyfriend I was going to make it and he was like absolutely not, I don’t want pumpkin pasta. Well, I made it tonight (with Italian sausage) and said he could eat leftover pizza if he didn’t like it. I received a “well that’s quite delightful!” I don’t know why he doubts me, he always loves everything I make from what to cook!

I’ve never made a recipe so fast! I’m with you- savory pumpkin only please. My whole family LOVED this. And even with making two versions (one GF) it was still fast and easy. We might even get everyone to bed on time tonight! 🎃💕

We were out of real milk, so I used almond. Wouldn’t thicken, so I stirred up a little arrowroot w/a couple spoons of broth and added back in. Moral: probably need a roux if using a nut milk. Look forward to trying with dairy milk, but the flavor was still solid.

Made this last night! Children (11&9) LOVED it. Husband said “ I wish it was pumpkinnyyerrr ( it’s a word, trust me) -- then proceeded to have a second serving.

So delicious - admittedly I added some melted butter and a few pats to the top before broiling because..butter, but it didn't need it ! My pumpkin hating husband is now a convert .

Darn, gf is tricky. Missing the starch from the glutinous pasta doesn't allow it to thicken up as much.
