I am the cook in our house (it stresses my husband out so much), but I asked my husband to make this for me for mother's day. He did and it was SO GOOD. But the reason I'm commenting is because he kept telling me how helpful the notes in the recipe were and how they made him feel more confident as he was cooking, like he knew things were moving in the right direction. So thank you for your super accessible and delicious recipes!

No worries at all, just bake the entire time! The broil just gives our meatballs some nice color which is more for aesthetics than anything.

When I check the meatballs with a meat thermometer, it doesn’t get up to 160. Shouldn’t it?

I thought to myself “Caro said not to buy Israeli couscous so I’m good… this is pearled couscous.” Well, it turns out they are the same. I was way too far into the recipe when I realized my mistake but I have good news! Do everything else exactly as the recipe says, but after you bake covered for 5 minutes just remove the meatballs (set them aside), stir the zucchini and PEARLED couscous 🤦🏻‍♀️, cover, and cook for an additional 8-10 minutes! Then put it all back together. It was DELICIOUS! This is one of our fave WTC recipes. It’s a hidden gem! So light and fresh but filling. Thank you!

For some reason, I don’t think I made this one when it first came out. Just had it tonight (I doubled the whole thing since I had squash & zucchini that needed to be used plus 2 lbs of ground Turkey). Very delicious, light and bright flavors! We recently had to go very low sodium for my husband’s health, and I’ve learned that citrus is the closest flavor to salt there is. This recipe was really flavorful without any of the added salt! Plus couscous has 0 sodium. It felt like a big win after several weeks of boring flavors!!

Didn't have couscous so I made it with orzo! Tastes delicious! A bit too salty for my taste but definitely will enjoy! I do have a dairy allergy so I skipped the dip (tried to make it dairy free but it came out too soupy).
