I am the cook in our house (it stresses my husband out so much), but I asked my husband to make this for me for mother's day. He did and it was SO GOOD. But the reason I'm commenting is because he kept telling me how helpful the notes in the recipe were and how they made him feel more confident as he was cooking, like he knew things were moving in the right direction. So thank you for your super accessible and delicious recipes!
I thought to myself “Caro said not to buy Israeli couscous so I’m good… this is pearled couscous.” Well, it turns out they are the same. I was way too far into the recipe when I realized my mistake but I have good news! Do everything else exactly as the recipe says, but after you bake covered for 5 minutes just remove the meatballs (set them aside), stir the zucchini and PEARLED couscous 🤦🏻♀️, cover, and cook for an additional 8-10 minutes! Then put it all back together. It was DELICIOUS! This is one of our fave WTC recipes. It’s a hidden gem! So light and fresh but filling. Thank you!
I love this recipe and have made it many times, but tonight I had only green beans - still turned out great. I love that WTC has helped me stop panicking about not having the exact ingredients (ie only had half the fresh herbs so just supplement with dried herbs). I was distracted by my newborn and forgot the step to bake the meatballs after broiling/before adding the couscous - just monitored the temp of the meatballs and the fluffiness of the couscous at 375 and it somehow all came together nicely.
For some reason, I don’t think I made this one when it first came out. Just had it tonight (I doubled the whole thing since I had squash & zucchini that needed to be used plus 2 lbs of ground Turkey). Very delicious, light and bright flavors! We recently had to go very low sodium for my husband’s health, and I’ve learned that citrus is the closest flavor to salt there is. This recipe was really flavorful without any of the added salt! Plus couscous has 0 sodium. It felt like a big win after several weeks of boring flavors!!
Didn't have couscous so I made it with orzo! Tastes delicious! A bit too salty for my taste but definitely will enjoy! I do have a dairy allergy so I skipped the dip (tried to make it dairy free but it came out too soupy).
Not sure how I missed this the first time you posted it but made it tonight & it was a 10 for sure. Such a light bright spring dish. Definitely a keeper. 😋

I love this so much! YES to husbands in the kitchen!!!!!
Our broiler doesn’t work, any suggestions?
No worries at all, just bake the entire time! The broil just gives our meatballs some nice color which is more for aesthetics than anything.
What if I only have Israeli couscous? 🤷🏻♀️
Cook separately!!
This was delish!! I topped with quick pickled red onions 😁 Totally toddler approved in this household too
pickled red onions on EVERYTHING!!!!!
When I check the meatballs with a meat thermometer, it doesn’t get up to 160. Shouldn’t it?
Keep cooking until 160!
hi!! the price is now $50 -- this recipe was several years ago -- so yes the code is still active, 20% off is 42.50 now! xo

Love this, Christine - sounds like you nailed it (even with a newborn in the mix)!!

Did you use table salt instead of kosher?
I have been making this since the first time you posted and am making it again tonight for friends. It’s so good and fresh. Always a hit!!
Loved this one and minimal clean up too!

Made this tonight and loved it! Even my picky kid ate it. Will definitely make it again. Thank you!
Can I prep the meatballs and sauce ahead of time and just leave in the fridge for a couple hours before cooking?
yes definitely!!
