I am the cook in our house (it stresses my husband out so much), but I asked my husband to make this for me for mother's day. He did and it was SO GOOD. But the reason I'm commenting is because he kept telling me how helpful the notes in the recipe were and how they made him feel more confident as he was cooking, like he knew things were moving in the right direction. So thank you for your super accessible and delicious recipes!

I thought to myself “Caro said not to buy Israeli couscous so I’m good… this is pearled couscous.” Well, it turns out they are the same. I was way too far into the recipe when I realized my mistake but I have good news! Do everything else exactly as the recipe says, but after you bake covered for 5 minutes just remove the meatballs (set them aside), stir the zucchini and PEARLED couscous 🤦🏻‍♀️, cover, and cook for an additional 8-10 minutes! Then put it all back together. It was DELICIOUS! This is one of our fave WTC recipes. It’s a hidden gem! So light and fresh but filling. Thank you!

No worries at all, just bake the entire time! The broil just gives our meatballs some nice color which is more for aesthetics than anything.

When I check the meatballs with a meat thermometer, it doesn’t get up to 160. Shouldn’t it?

I love this recipe and have made it many times, but tonight I had only green beans - still turned out great. I love that WTC has helped me stop panicking about not having the exact ingredients (ie only had half the fresh herbs so just supplement with dried herbs). I was distracted by my newborn and forgot the step to bake the meatballs after broiling/before adding the couscous - just monitored the temp of the meatballs and the fluffiness of the couscous at 375 and it somehow all came together nicely.

For some reason, I don’t think I made this one when it first came out. Just had it tonight (I doubled the whole thing since I had squash & zucchini that needed to be used plus 2 lbs of ground Turkey). Very delicious, light and bright flavors! We recently had to go very low sodium for my husband’s health, and I’ve learned that citrus is the closest flavor to salt there is. This recipe was really flavorful without any of the added salt! Plus couscous has 0 sodium. It felt like a big win after several weeks of boring flavors!!

An oldie but such a goodie! I accidentally used pearl couscous and never turned the oven below 425 but it all ended well. Just cooked for 10 min longer covered and all was still delicious!

I made this tonight and it was delicious! my kids always complain about zucchini but I love it so i did it anyway and one of them at it all gladly which is a win! I love the salty feta as a topper.

This was so tasty! A real winner. I think next time we may skip the cheeses since there's so much flavor regardless, and throw in an extra zucchini. But will definitely need to make this one again soon!

Revisiting this from the archive. Just as tasty as I remembered. But I was not predicting my 2 year old would think the couscous looked like sprinkles!! 😂

I just tried this and it is seriously epic. Everything just fits in a tray. My 4.5 year old devoured the turkey meatballs and couscous. Maybe the zucchini one day.

An oldie, but a goodie! So easy and truly one pot, kids love this one. Broiled meatballs first, then added couscous and frozen corn at the next step, corn was delicious in here. Thanks again, keep up the good work!!
