Could we add potatoes to this? I am thinking baby potatoes for the last hour of cooking! I am omitting fennel as i don't love licorice.

Made this tonight. Was definitely delicious- do NOT skip on the horseradish sauce..it makes the meal. The fennel really adds depth of flavor but no lingering licorice taste (I promise). This is v. off brand for the WTC reccos...lots of dishes, lots of mess, a special run to the store for items I don't typically have on hand but I was in the mood for comfort food due to a tough week and getting buried in this kitchen project was kind of nice. Definitely would make again though. Maybe purchase pre cut mirapoux to save on the chopping/prepping time and use of food processor? I used bacon instead of pancetta. Same for the horseradish sauce- had greek yogurt, forgot sour cream. It was a good sub. Also didnt want to spend $4 per each herb so got parsley (cheapest) and used rosemary from my neighbors garden where it grows wild. Made a side of roasted potatoes with a packet of Lipton Onion Soup seasoning and olive oil (literally thats it - dont even s and p) and it was a great little meal that even my toddler entertained. Husband had loads of compliments (as if I didnt just follow a recipe) Enjoyed this even in 90 degree weather.

Any recommendation for a wine to use? Not a red wine person so I have no idea. If I can get it from the grocery store even better.

Any suggestions for what to do with the leftover horseradish sauce? It’s delicious! But have 3/4 leftover and don’t want it to spoil!

Made this last night for the extended family and it was a total wine! My 4 year old even ate the meat (double win!). I halved the horseradish cream recipe because it felt like a lot for a 3 lb hunk of meat, and it proved to be a good move for our crowd. Win! Would love to make a little more next time so we can try the soup-out-of-leftovers reco!

This was phenomenal! The active cooking took closer to 1.5 hours as I was also wrangling an 18 month old, but it was all worth it. Skipped the pearl onions and forgot parsley in the horseradish sauce but otherwise followed exactly and omg. So good. Served over roasted peewee potatoes.

I am excited to pull the beef roast out of the freezer next week to make this when the high temps *might* dip into the 80s from the 100s we have been at all summer. It will feel like fall!

This sounds AMAZING! I’ve been planing to make a nice meal for my parents to thank them for taking care of me while I recovered from kidney stone surgery earlier this summer ... this seems like an ideal recipe for that purpose. Also, Dan’s cookbook just joined yours on my list of ideas for when my mom inevitably asks what I want for Christmas.

Made this on Sunday and it was great! Next time I’d use frozen pearl onions to avoid peeling a million tiny onions. The next day I turned it into soup, with wild rice and the leftover potatoes from the sliced sheet pan chicken. A huge hit for our whole family, including our toddler.
