Just realized I made this with a 28 ounce can of diced tomatoes instead of the 13.5 ounce I was supposed to use for this recipe! Anything I can do to offset that? Just made the tomato soup and the bolognese and was so used to using the larger tomato cans!! Oops!!!!

Hi There! I just became a subscriber after a bag of red lentils stared at me from the pantry (no idea who bought it, but here we are). I only got a chance to go to Trader Joe’s and couldn’t find a lot of the individual ingredients (fish sauce, red curry paste) but I found this “Thai Red Curry Sauce” — how could I use that and still make it a soup? I’m guessing just add the veggie stock and maybe some more coconut milk? Thanks for your help!

TJ's is so bad for ingredient shopping! Always have to go elsewere for things like that.

That curry sauce is great.... Add it plus the stock to the pot. I'm afraid if you add another can of coconut milk it won't be flavorful enough. So start with just that plus stock and add the coconut milk if you need more liquid.

And I have a suggestion for a future episode: “How to make/keep friends as an adult” similar to y’all, my husband and I have moved a lot which has been great but it’s also made it very difficult to make new friends and stay connected to old friends. Could I use chicken breast instead of tenders - and cut into small pieces before cooking? Would the timing and process still be the same for cooking?

This was so incredibly delicious and all 3 of my kids, including 2 toddlers, loved it! Swapped out fresh ginger and cilantro for ginger paste and cilantro stir in paste, but otherwise followed the recipe exactly. So easy and yummy!

This was so so good! My family/neighbors have dubbed me salad lady after all the salads I make of yours but I think this stew may be the winner. Also - if you are going to TJ's anyway for the mirepoix, recommend the frozen garlic naan to serve on the side. Thank you!

Reviews from my household - husband: "this is the best f**king thing you've ever made", one year old: ate an adult sized portion with her hands, three year old: "I don't like lentils. I don't like soup. Why is it orange?" So two out of three is pretty good!

Just tried to make in the instant pot and it kept burning so had to take out and put into a pot. Still delicious but wouldn’t try this in an instant pot again.

I had the same problem ! It never really sealed then got burn noticed I just turned on sauté but will next time do in stove

I *think* the curry paste burned on the bottom when mixed with the vegetables and the instant pot kept detecting the burned stuff.

This was just perfect. Added flatbread on the side and a ton of baby spinach that basically melted into it. Will freeze a few bags for easy lunches or dinners. Thank you SO much, Caroline.

Sauté as written, instantpot on high pressure for 7 minutes, let it naturally release!

Make the whole thing and freeze it in individual portions in quart ziplocs for a quick healthy lunch whenever you need it all winter!
