OMG you always know what we need, Caro -TY! I loved the cheesy chicken/squash but the fam got picky about it so going to try the rice sub this time (their loss; it was great). Always appreciate your deep attention to detail so everything works, every time 🥰
This is super helpful to see how versatile meal plans can be using leftovers. I'm so curious, though, as you're a mom of 3 young kids, do your children eat these meals or do you "deconstruct" them to be more simple? Currently navigating life with an extremely picky 4.5 y/o (who magically turned this way at 3) and sadly, an *already picky* 18 mo old. I love to cook but feel very much like a short-order cook these days with kids who refuse to eat things like salads or soups or with "weird brown spots" (i.e. perfectly seared protein).

I’ve made tiny tomato pasta at least 3 times in the last month
I can vouch that tiny tomato pasta is just as great cold as it is warmed up 🤣
