My dad does not cook and my mom has been “rebelling” against the kitchen lately after 3 decades of cooking dinner every night so they eat out a lot. I convinced my 67 year old dad with literally ZERO cooking experience that he could make this recipe about 2 months ago and he tried it, loved it, and my mom said he makes it once a week now

Thank you, Caroline, for preventing a mediocre pizza night! I cooked up some chopped bacon instead of the sausage, then followed your recipe (using 1/2 bag frozen fire roasted corn). Served over noodles with burrata and fresh basil. My younger kids would only eat buttered noodles with parmesan, but the rest of us enjoyed a healthy dinner thanks to you 🤣

Do you have any suggestions for a winter version? Maybe shaved brussel sprouts, chicken sausage, etc. I love the quick sauté meal but am having trouble putting the winter version together.

oooo i should develop that! love the idea of shaved brussels and chicken sausage together. its tough because most other winter veg require more time!! could grate a sweet potato and add that in there...

“I wrote this recipe for 2 eaters rather than the usual 4 to 6 because… my kids won’t touch it with a 10-foot pole.” 😅 my daughter doesn’t like cooked zucchini, but weirdly likes it raw. I’m thinking of trying this but giving her all the veggies raw!

Caroline, funny, I have a taste for sausage-don't eat much of it-but every now and then, I do and fix it like my mom did, with peppers and onions....I like the ingredients in your dish and now i have to go shopping! :) thanks

Do you have any tips for cutting corn off the cob? It’s one of my least favorite tasks as I feel like corn pieces end up all over the place.

yes, after corn is cooked, coll it enough to handles then get a sizeable, deep bowl and put cob in the center, hold with one hand and cut corn off ...it all falls into the bowl...no mess!

This is the amateur gardener's perfect recipie - all of these veggies are easy to grow (at least on East Coast) and you get a lot of them!

So simple & delicious. I served it over farro to bulk it up for my husband. And I didn’t slice the baby tomatoes, just threw them in whole & they turned out perfect that way—some burst, some stayed whole. Love that I was able to use tomatoes, zucchini, & basil from my garden 🙌🏼. Will definitely make again!
