“I wrote this recipe for 2 eaters rather than the usual 4 to 6 because… my kids won’t touch it with a 10-foot pole.” 😅 my daughter doesn’t like cooked zucchini, but weirdly likes it raw. I’m thinking of trying this but giving her all the veggies raw!
Thank you, Caroline, for preventing a mediocre pizza night! I cooked up some chopped bacon instead of the sausage, then followed your recipe (using 1/2 bag frozen fire roasted corn). Served over noodles with burrata and fresh basil. My younger kids would only eat buttered noodles with parmesan, but the rest of us enjoyed a healthy dinner thanks to you 🤣
Caroline, funny, I have a taste for sausage-don't eat much of it-but every now and then, I do and fix it like my mom did, with peppers and onions....I like the ingredients in your dish and now i have to go shopping! :) thanks
yes, after corn is cooked, coll it enough to handles then get a sizeable, deep bowl and put cob in the center, hold with one hand and cut corn off ...it all falls into the bowl...no mess!
So simple & delicious. I served it over farro to bulk it up for my husband. And I didn’t slice the baby tomatoes, just threw them in whole & they turned out perfect that way—some burst, some stayed whole. Love that I was able to use tomatoes, zucchini, & basil from my garden 🙌🏼. Will definitely make again!
I made Cookout Chicken, sausages, and a version of the corn salad for my kid's birthday party yesterday and today, when I REALLY didn't feel like cooking, I made this!
This looks incredible. Adding courgette to my shopping list
had to look up 'courgette'....like yellow squash I'm thinking...
Oh it's just British English for zucchini!
For those of us who hate sautéing, could you make this on a sheet pan?
Amazing inspo as I get ready to go to the farmer’s market this morning!
Do your kids actually eat this? My 3 year old acts like zucchini is the devil’s squash, so I’m afraid to try it 🥲😫

Omg I had this for lunch yesterday! I love this recipe!!

Do you have any tips for cutting corn off the cob? It’s one of my least favorite tasks as I feel like corn pieces end up all over the place.

She did an IG tutorial on this!
Sounds great! Can’t wait to try!
I've got to try this. So versatile and perfect for summer. And I love all the possible additions as well. Even have a big pan! Thanks.

And just had the leftovers for lunch & that was just the perfect lunch & exactly the self-care I needed today ✨
This was so delicious! I was looking forward to cooking it all day…which is noteworthy for me, because I usually do not feel like cooking 😉
This was delicious and easy! Thank you for a veggie forward meal!
