Could you use yellow curry in this? I loved the flavor of it so much in the summer chicken curry - just wondering if that would work here? LOVE this salad!!!

What is the best way to freeze the dressing?

Expand full comment

In ice cube trays for individual portions or just in a ziploc and lay it flat to make a big salad another time!

Tasted amazing but I changed up my curry paste and it is soooooo spicy. I think I can do either spicy meat or spicy dressing, but not both. The add ins were amazing and the chop chop was a great tip.

oh shoot! to save the dressing, just blend in some more of all of the other ingredients! or just stir in some soy sauce and sesame oil and lime juice, to make it easier.

Should I use roasted salted pumpkin seeds as sub?

Expand full comment

Yes you should!!

Unless it says toasted, the recipe is calling for plain! But look at the subs line for this one for more clarification :)

Salad for dinner is something to cheer!

Made it once mostly to the recipe, and a second time with a bunch of subs (napa cabbage instead of romaine, peas for edamame, turkey instead of chicken) - excellent both ways. I think I may have actually preferred the version with thinly sliced cabbage.

Any defrosting guidance for the second half? Thanks!

leave in fridge overnight or throw in a skillet with a bit of oil and saute to break it up and warm it!

Made this last night. It was delicious! Made with grilled chopped chicken instead of ground and added mango. Will definitely make again!

Is the time to chop ingredients like the lettuce included in your 30-45 minute listed prep time?

Expand full comment

yes! the only chopping is romaine, avocado, and cashews!

This was great. Thanks!

THIS DRESSING!!!! so good wow

Ok yum! I used rotisserie chicken per the recommendation to save time and skipped all the cilantro (cilantro hater here). Still delicious. The dressing is amazing! I'm definitely going to make this again and use the ground chicken recipe.
