Could you use yellow curry in this? I loved the flavor of it so much in the summer chicken curry - just wondering if that would work here? LOVE this salad!!!
Tasted amazing but I changed up my curry paste and it is soooooo spicy. I think I can do either spicy meat or spicy dressing, but not both. The add ins were amazing and the chop chop was a great tip.
Ok yum! I used rotisserie chicken per the recommendation to save time and skipped all the cilantro (cilantro hater here). Still delicious. The dressing is amazing! I'm definitely going to make this again and use the ground chicken recipe.
I doubled the chicken like you suggested and pulled it out this week to defrost. I made the Thai chicken rice bowls and broccoli with it! I put them in 5 bowls and am bringing them to work each day with the peanut sauce you suggested! Divine, I look forward to lunch each day now! thanks for always giving so many options with each recipe.

I prepped everything for this and then the cloudy day turned into a gorgeous sunny day and I *needed* to grill. So we did the salad/dressing with teriyaki steak and WOW it was so good! The next day we had the OG recipe with the ground chicken and, again, it was a delicious party in our mouths. It’s a salad that actually does fill you up — and also gets compliments thrown your way. A++
Patted my past self on the back when I dug this out of the freezer and have been having with a roasted carrot, date, pistachio, little gem salad - it is an awesome dressing!
Made this in the rice bowl form for a dinner party last night and it was the best possible meal for this. Not only was it delicious but everything was able to be made ahead of time except the rice. When we were about ready I made the coconut rice (don’t miss this step it’s worth it and so easy). Everyone was wow’d and I wasn’t running around cooking or trying to time anything while I had guests over. Will make again and often
Yoooooo this dressing!!!

What is the best way to freeze the dressing?

Should I use roasted salted pumpkin seeds as sub?
Unless it says toasted, the recipe is calling for plain! But look at the subs line for this one for more clarification :)
many thanks for the tip on cilantro stems!
This is so good!! I ate two bowls last night and now I’m eating the leftovers for breakfast
Salad for dinner is something to cheer!

Ugh just made tonight and it was so so so good. My 3 year old may have just eaten edamame dunked in soy sauce but we'll call that a win
