My eggplant-hating children declared this "the best pasta ever" and while there are no pasta leftovers (darn), there are sauce leftovers that I'm freezing and it's currently a 3-way tie for what I like most about your recipes - almost always enough to freeze for another meal, fantastic food, or ingredient amounts in the directions ;)
This looks so delicious and I can't wait. If I am making the pasta in a different pot, should I use less water in the sauce?

Yum! FYI for others with the same equipment - I used a 12in skillet and it wound up not being deep enough to hold it all. I did all the browning and sauteeing in the skillet, and then moved the whole shebang to a pot for the boil/simmer. Worked great!
Can't wait to make this one! Eggplant is my absolute favorite. My flat mates from Italy made us the best eggplant dishes when we all lived abroad it Ireland. Everyone should study abroad...memories and friendships for a lifetime!
I've had my eye on this recipe because our toddler doesn't touch eggplant and I just love them. Tried this last night and it was a success. Also helped that I cooked Farfalle pasta and my husband called them "Butterfly pasta". But I also saw my kid just scoop up a spoonful of plain sauce and devour it. Awesome recipe!
This has become an instant fam favorite. Have made it twice now, once omitting the meat, most recently with a beyond meat substitute. Both ways fan-fucking-tastic. Even my 4 yo, who declared it looked “disgusting” hoovered it after trying a bite.
My toddler, who only eats beige foods at the moment, ate this and declared it “mm nummy” which is the equivalent to a Michelin star for us. Thank you!!!
This was delicious. I’m not always a fan of eggplant or sausage, but really liked them in this dish. My one year old couldn’t stop shoveling it into her mouth.
This was excellent. I struggle with making eggplant at home in a way I find appealing -- I love a good fried eggplant but who has the time? I made the vegetarian version with extra eggplant -- I love the soft and creamy texture the whole thing gets from the eggplant breaking down a bit. Was a hit with my toddler too. Really appreciate a great one pot recipe, I just subscribed and excited to try more of them.
This was a huge hit with the whole family!!! Soooooo good! And my 10 year old son followed the recipe and made most of it, which was fun! I did have to keep adding a lot of water and increased the cooking time by about 20 minutes - I could not get the pasta to finish cooking! I’m sure it was just the type I used (those little tiny beads that look like couscous). 100% worth the wait :)
I cannot wait until my sons can COOK FOR ME! not sure why the water wasn't enough -- possibly you were cooking over too high of heat, but great job solving the problem and just adding more water!
This was so good! Baby loved it (she ate like 3 helpings and kept asking for more). We’re dairy free so I added nutritional yeast instead of Parmesan and topped with toasted bread crumbs. Can’t wait to eat the leftovers tomorrow!
Made this tonight and omg so good. Do not have 4 days worth of leftovers like I was hoping but my 4yo hit his veggie quota for the week. Can’t wait to do a fall version with butternut squash!

I used gluten free pasta and omitted the water from the recipe. I saved 1 cup of pasta water to add back in at the end. It was amazing!
