My grocery delivery order changes the minute it gets warm here in Ohio! As soon as that summer heat hits my body CRAVES deli turkey sandwiches. On whatever bread we have, with sweet hot mustard, a slice of cheese, and tons of baby butter lettuce. Served with SALT & VINEGAR KETTLE CHIPS (obsessed) and a sliced baby cucumber to feel slightly more virtuous, plus some of the summer's freshest fruit (ideally cherries, my fav).

I also get obsessed with fresh pasta salads or veg salads - tomatoes, peppers, cucumbers, red onion, chickpeas, some type of greek or Italian style vinaigrette. And if I'm feeling fancy, I'm adding salami and provolone, mob-wife salad style.

My current fav lunch is a simple little chickpea salad: canned chickpeas, grape tomatoes, avocado, a little red onion, with feta on top. Drizzle with olive oil, salt and pepper and some balsamic if you feel like it, refrigerate for 20 min. Boom, lunch!

Omg same!! Sometimes I mix cannellini beans or cucumber in too. No cooking!!!! 🙌

Yess!! Exactly! You can throw in whatever sounds good and you have on hand. I forgot my squeeze of lemon too if I've got it. 🍋

Go to lunch for my kids is “sprinkle toast” open faced peanut butter toast with a mix of pepitas, chia seeds and actual sprinkles 😁😁

This is my busy season at work (in addition to coming off Maycember with the kids), and we have been having fewer leftovers lately. (Is it just me or do faster meals tend to make less food?) To keep from getting takeout every day I have been grabbing a salad kit at Trader Joe's (the dill potato chip one and the asian-y peanut one without seaweed are my faves). I bring in a bowl, make half the salad, eat it, shove the half-empty salad bag into the dirty bowl (plz don't judge) and put the whole thing back in my lunchbox, which goes back into the fridge. And then I have the second half the next day. Glamorous it is not, but it gets the job done.

I’ve been into making a huge batch of orzo and mixing in tomatoes, bell pepps, feta, red onion, cucumber, chickpeas, etc. plop it on top of arugula each day with some homemade dressing and it’s the most delicious crisp lunch

My current favorite lunch is your mob wife salad and a bean/kale/veggie salad I make with your lemon vinaigrette. Eat all week salads have been a game changer for me since I work in the office 5 days/weekz

Lemon-parm chicken, quinoa, & kale salad. Every week.

Or some days just greek yogurt with fresh berries and the new cherry pistachio granola from Trader Joe's!

My 5 year old is *obsessed* with tomato sandwiches... like, he's had one daily for an afternoon snack since March-ish. He's going to be jazzed about actually good summer tomatoes!

My fav lunch lately is a pseudo egg salad - mashed hard boiled egg and avocado, plus a big scoop of cottage cheese and all the seasonings. My go-to is TJ’s garlic aioli, bagel sprinkle, and ranch powder, but changes with what I have around!

I’m on a fitness and protein journey so I have what I lovingly refer to as “cottage cheese slop” which is some sort of meat (tuna or chicken) with veggies and seasonings slopped on top of cottage cheese 😅

Current favorite lunch for my 7 year old is a "muffin tray buffet" where I put leftovers (or whatever else I can find in the fridge or pantry) into the cups of a muffin tray. Going on two years strong and the novelty hasn't worn off!

My favorite summer lunch: thinly slice one zucchini lengthwise with a mandolin, saute with some olive oil/red pepper flakes/salt for a few minutes, halve a handful of cherry tomatoes and toss them in the pan. If corn is in season, add some off the cob (great way to use leftover already cooked ears). Saute until the tomatoes are at your preferred level of doneness, finish with pesto and burrata or feta. Yum!!

I usually do a salad for lunch, either a prepped good all week one or a bagged salad with a little added produce and protein (love some frozen falafel!). But I do love a good sandwich and am looking forward to trying some of the ideas here!
