Yogurt is the BEST mayo sub. I use it for egg/tuna/salmon/chicken salad. I also use it to sub sour cream. And I often use pressed cottage cheese (it's not super easy to find, but a local-to-Toronto dairy makes them. They specialize in Eastern European foods) for feta when I don't have feta on hand.

I agree! Yogurt IS the best sub for all of those things. And living where I do in the SW, if I don't have feta (God forbid!), I use Cotija. It's nicely aromatic, pungent might be a better description, and I love it, although not quite as much as I love feta. Now, I just have to learn how to make my own.

Yes, exactly!!! The how-to for chicken thighs is in the sausage sub section but it can def be swapped for shrimp instead. Or of course, just omit and have a sausage + veggie paella!

Great recipe. I made it with 1.5 cups of rice (and 3 cups of broth) and it came out perfectly. I also added red peppers and added them with the asparagus and peas. Added some nice color. I strongly detest saffron and the paprika gave it a beautiful color and the smokiness.

This was a great meal! So delicious with plenty to take to family. I used a salad spinner instead of the colander which helped drain the water from the leeks. Also make sure the shrimp is spread out on top of everything so they cook evenly ! Thanks Caro !!

This was sooo good!

I added jalapenos and frozen spinach. Since i didn't have leeks i used onions instead.

I usually don't use a whole sausage so I only used half, but i should of stuck to the recipe and used the whole thing!

When i made the sauce i wasn't impressed. But when the whole dish was done and i drizzled it on top it's so good! I kept adding more on top!

The only thing I'd change on the recipe is to season the shrimp. Since they are added to the top they don't get the flavor of the rice below. Actually kinda tasted like peas! Next time I'll add salt, pepper, and a touch of paprika to the shrimp on top!

After going back for 2nd and a 1/2 — my husband told me he wasn’t looking forward to dinner tonight bc he was sure he wouldn’t like it.

😆😒. Caro did it again. I used the saffron + undersalted intentionally . If you use “good salt” don’t undersalt the recipe — you’ll just add it later.

Great meal— double the aoli and don’t measure the peas —just toss the entire bag in.
