Yogurt is the BEST mayo sub. I use it for egg/tuna/salmon/chicken salad. I also use it to sub sour cream. And I often use pressed cottage cheese (it's not super easy to find, but a local-to-Toronto dairy makes them. They specialize in Eastern European foods) for feta when I don't have feta on hand.

Great recipe. I made it with 1.5 cups of rice (and 3 cups of broth) and it came out perfectly. I also added red peppers and added them with the asparagus and peas. Added some nice color. I strongly detest saffron and the paprika gave it a beautiful color and the smokiness.

Thanks! I’m allergic to mollusks (scallops, mussels, clams, and so on) but not shellfish, so this is right up my alley!

This was a great meal! So delicious with plenty to take to family. I used a salad spinner instead of the colander which helped drain the water from the leeks. Also make sure the shrimp is spread out on top of everything so they cook evenly ! Thanks Caro !!

This was soooo good. Don’t skip out on the basil lemon aioli - it really did make it that much better. I have a friend who is allergic to shellfish so I just sautéed those on the side for the ones who can partake and we just topped our bowls. I would imagine it would even be a tad better if the shrimp had been cooked with everything but it was still super yum. Def a keeper

I made this paella last night. My husband loves sausage, and I love shrimp, so we were both happy. I added garlic and olive oil to the lemon aioli since I had no basil, and it made this already stellar dish even tastier. I love to cook, but I don't always feel like cooking as you say. I was fretting about dinner last night before I found this recipe. I don't know how such a beautiful and scrumptious dish was so quick and easy to make, but thank you SO much. This will definitely be a go-to from now on.
