Check out Jacobsen Salt Co. if you’re ever up in the PNW, or find them in a fancy shop somewhere. love them. Tiny spot on the bank of Netarts Bay on the OR coast, where they get their salt water, a tiny bay with no major river systems or population centers (= super clean water). They’ve got HUGE flakes! And their black garlic salt will make you weep, you’ll be putting it on everything (or just sticking your finger in the jar for a hit). They also make salty caramels. I’m drooling just thinking about them right now.

Molly Baz changed my salting life a few years ago so I really love this email! but I CANNOT find Diamond salt anywhere near me. Do you have a recommendation for an online retailer by chance? It’s $13 on amazon 🙄

Um, iodine is NOT a naturally occurring element in salt! Humans started artificially adding iodine to salt to prevent goiters. Most table salt does contain iodine (look for "iodized" salt), but it's usually not in sea salt or other fancy salts. And you do need iodine! It doesn't have to come from salt, but that's an easy way to get it.

Can you tell me why you wouldn't want to cook with a grinded salt? (slightly panicking as this is how I have been cooking for the past year haha!)

Thank you! Future topic ideas include how to prevent cheese from sticking to the pot when making pesto pasta, cacio e pepe etc., and browning chicken or really anything in butter and oil for long enough without it turning to brown butter or burning!!!

Hi Caroline! What would you say is the best time to use a coarse Himalayan Pink Salt if we have a lot on hand? We typically use our kosher salt cellar when cooking. Thank you!

Am I unhinged for cooking with himalayan pink salt? I just measure with my heart 🤣 I have some other salts, should I be using the Himalayan pink salt for certain things only?

Our Safeway stopped carrying Diamond Crystal and I was so bummed. I was at my parents’ for dinner for my sis’ bday, and I saw my mom had labeled her Morton’s salt container with Diamond Crystal. I shreaked “where did you find this?!”. Whole Foods of course. So I guess I’ll be making a special stop there soon. I agree that it does make a difference. I just use a little less when I have to use Morton’s. Who knew that I would ever care about brands of salt?

Why no salt grinder particularly?

A friend of mine had a horror story about someone who never used iodized salt and became deficient, but her husband worked for big salt, so I guess I should've... Taken that story with a grain of salt...
