Occasionally we have breakfast for dinner, I make a massive batch of pancakes and freeze whatever is leftover. They are helpful for kids' breakfast and a kids dinner with a side of yogurt or boiled egg and fruit.
This! You can even cook the pork in the crock pot. I did that recently and froze part of it after I shredded it. For one night, I added homemade BBQ sauce and made stuffed baked potatoes. And the rest of it I made tacos with. I could've done more things with it, but tacos are life, so that's what I did with most of it lol.
Hi Caroline - I am a huge fan of your substack and we pretty much exclusively make your recipes at home! We are about two weeks away from welcoming our second child and I wanted to get ahead of making some freezer friendly meals for the post partum fog. Forgive me if I missed it but is there a way to filter your recipes by things that will freeze/keep well? Thank you thank you!
Not necessarily cooking, but I have come to absolutely love kale! I didn't realize that massaging it was a thing for the longest time. Once I learned that trick, it was game on! It changes the texture and flavor so much! I massage with a little EVOO and salt. I can double batch this and use for salads for a few days, toppings and all. The kale doesn't get yucky like a lettuce would, so this makes lunch/dinner for a few days, depending on how much I prep.
My favorite cook once eat twice (or maybe more) thing to cook is spaghetti! So basic, but it always tastes better the day after and my kids will actually eat it.
My husband does not like left overs. So I don't cook for him anymore. LOL.

Also, I think one of the best things is a slow roasted or pulled pork - use it for bowls, tacos, sliders... the options are endless!

Great piece. Leftover meals are often improvised and singular, like a fleeting kiss from a midnight lover, and so all the more special for it.
