Hi there! I am doing a test run tomorrow for Christmas Eve. Can you clarify the weight for the steak? Using flank as a sub here and have a 2.5lb slab from Costco — would this be the appropriate amount of spices for the marinade? Seems like that would make sense. Will be feeding 16 people on Christmas so I’ll need to triple… quadruple?? Thoughts? Much appreciated!!
They are probably 8 to 10 ounces each so I think this is a perfect swap. You're going to want about a half a pound of meat per person because it shrinks. Yum!!!
This is so good. I can’t wait to make it for a dinner party - it’s such a beautiful presentation too. I can envision this will be a frequent repeat at house.
I’ve made this several times because it’s so amazing, but tonight was the first time I realized this question: do you close the grill or leave it open when you cook the steak and corn? I’ve always closed it until tonight I realized the recipe doesn’t specify… 😃
