This was so delicious and approved by all the family members. I’ve never seen my two year old absolutely demolish something like these Flautas. I think she ate 3? !

Can I cook these a whole day in advance? Fine to leave in the fridge overnight? Or better to only prep a few hours before?

I think they'd be best if you prepped the rolled flautas the day before and baked them fresh before serving. You can definitely reheat already-cooked flautas in the oven, but they might not be as crispy!

My whole family (6.5 year old and 4 year old included) LOVED this recipe! It came together so easily (I bought pre-shredded rotisserie chicken) and was able to make this and pack everything up for an impromptu pool dinner for Cinco de Mayo. We had enough leftover supplies to make a second batch for lunch today! The corn salad was so fresh and delicious - will be repeating that all summer!

These are in the oven now! In the spirit of using what we have, I threw a half chicken from our freezer in the instant pot and shredded that meat. Still super easy.

I’m doing this with ground pork and just realized I mixed it all without cooking it first 😬 should I just cook it now? Or assemble it and leave it for longer in the oven?

HMMM. Hm. this is a puzzle. I'm worried it will get too greasy if you assemble without precooking. But I'm not sure how cooking all that dairy will go. Honestly, I think either way is a toss up and will come with some funkiness, but it'll still be delicious!! I think I'd assemble and cook for longer.

These were a hit in our house! Our six year old tried the flautas, loved the salad with chips (as though it were a salsa). I also did the flautas in the air fryer at 400 for about 8-10 minutes, they were crispy and delicious!

Made these last night and they were a hit. I microwaved the corn in my anyday dish bc I was lazy and using our little breville oven and didn’t have room on the sheet pan. Turned out great and I used the bowl to serve the salad.

Hey Caro! If I use frozen corn, could I still toss it on the sheet pan and roast it with the flautas? If so, should I defrost the corn first and then roast, or can I roast from frozen? I’m worried about a soggy mess

Hi Hannah - you could def add to the sheet pan with the flautas! So you could either thaw and strain it, or you could run the frozen corn under cold water to remove any ice crystals. Enjoy!!!

This was another hit with the family. My toddler did best with the flautas cut into little sushi-shaped sections, then cut in half again to make half-moons (otherwise she was struggling a bit with the tortilla). Preschooler liked dipping his in the special sauce. My favorite was the corn salad!

Have made these three times now because my entire family (kiddos included) can’t get enough. Subbed frozen corn today (because, December) and the salad was still great. Thanks for another keeper to add to our rotation!
