This recipe sounds awesome, but I’m even more intrigued by the second basically full recipe for the enchiladas in the 2 person section!! I have some bell peppers that need to get used up, so I may end up just making the enchiladas as the main recipe! 😅
I love that idea. Sauté the bell pepper, then chop up the raw shrimp before marinating, then add them straight to the skillet of peppers once they're soft
These tacos are incredible. The first time we made it, we used whatever cheese we had already (Colby Jack i think), it was so good! But this time we used unexpected cheddar from TJ’s, and it was even better! I have to admit I was a little unsure about the sharp cheddar, I but it really made it sing.
Feel so seen with the write up to the recipe. Heading to an all inclusive by the beach in Dominican Republic in a couple of weeks for the exact same reason. The original plan was Morocco but traveling with a 3 y old in tow seemed torture vs. a vacation. So decided I need to do a plop vacation too. Excited by the flavors of this recipe, passing off to husband to make (I'm allergic so making a fish version).
I knew I would be too too tired to make the stovetop corn tortilla (gluten free) version that I usually make, so I baked burrito-sized tortillas (both flour and gluten free). Those tortillas are nowhere near as delicious, but it was a passable delivery vehicle for the other much-craved ingredients and quickly fed some very hungry people!
Not recipe related, but planning a trip a Cabo trip with our toddler -- do you recommend Chileno Bay? We'll definitely be in "plop" mode too, but can't decide if we should go with Chileno Bay, or an all inclusive like Grand Velas? Appreciate the insider tips!
Wow this was so good. I subbed tortillas for tostada’s I needed to use up and added some refried beans at the base! Wow wow wow. For sure adding to our lineup
I don’t have chipotle anything! Can I use sriracha?
definitely, yum
Bless you 😂 literally mid dinner
Prep, thank you for your quick reply!

Made this tonight. Fast & delicious. Perfect for a hectic day. I used frozen shrimp (defrosted) & TJ’s pico! My husband devoured them!
Made this last night and was delicious I used chicken tenders instead of shrimp and it was so good!!! Will be my go to marinade now for tacos
What resort did you go to? Looking for a good one with little kids!
Caption on the picture where she’s holding the plate of tacos poolside says “Auberge Chileno Bay” 😊
Oops, I mean the other picture 😂

Holy these were so good. Even my incredibly picky toddler who subsides solely on chaos and a few goldfish gobbled up a huge amount of the shrimp!!

Made the veg alternative with a can of pinto beans simmered in the marinade. This was AWESOME! Thanks for the recipe!
Another amazing recipe. Shrimp had great flavor and using chipotle mayo worked well.
Made these last night and they are delish! Thanks for this recipe :)
We made this tonight and they were delicious! I subbed the Siete almond flour tortillas for gluten free. No adjustments were needed!
Teenager’s review: This tastes like something you’d eat in a restaurant.
