This recipe sounds awesome, but I’m even more intrigued by the second basically full recipe for the enchiladas in the 2 person section!! I have some bell peppers that need to get used up, so I may end up just making the enchiladas as the main recipe! πŸ˜…

I love that idea. SautΓ© the bell pepper, then chop up the raw shrimp before marinating, then add them straight to the skillet of peppers once they're soft

Holy these were so good. Even my incredibly picky toddler who subsides solely on chaos and a few goldfish gobbled up a huge amount of the shrimp!!

These tacos are incredible. The first time we made it, we used whatever cheese we had already (Colby Jack i think), it was so good! But this time we used unexpected cheddar from TJ’s, and it was even better! I have to admit I was a little unsure about the sharp cheddar, I but it really made it sing.

Made this last night and was delicious I used chicken tenders instead of shrimp and it was so good!!! Will be my go to marinade now for tacos

Feel so seen with the write up to the recipe. Heading to an all inclusive by the beach in Dominican Republic in a couple of weeks for the exact same reason. The original plan was Morocco but traveling with a 3 y old in tow seemed torture vs. a vacation. So decided I need to do a plop vacation too. Excited by the flavors of this recipe, passing off to husband to make (I'm allergic so making a fish version).

Help! I just realized the frozen shrimp I am defrosting for this are already cooked πŸ€¦β€β™€οΈ Would it still be possible to β€œmarinate” them and cook for like a minute? Then add to tortillas?

Just came here to say thanks, these are incredible! Quick, delicious, and immediately went into our regular rotation. My four year old helps with the prep because he loves shrimp taco night. Written while standing at the sink, housing the rest of the pico.

Was on my way home from a few nights at my parents knowing I had bare minimum ingredients and didn’t want to spend money and order out. Shrimp - check. Tortillas - check. A questionable tomato and some jalapeΓ±os - check. Used regular hot sauce instead of the chipotle one. And whipped this up in no time. Delicious!

I knew I would be too too tired to make the stovetop corn tortilla (gluten free) version that I usually make, so I baked burrito-sized tortillas (both flour and gluten free). Those tortillas are nowhere near as delicious, but it was a passable delivery vehicle for the other much-craved ingredients and quickly fed some very hungry people!
