Made for lunch... for my WFH life. Imagining that I'm on a beach with this sandwich by adding Cape Cod chips + a seltzer 😅

Was thinking I'd bring this to the pool with Cape Cod chips!

Ok. But what if I wanted to actually make it a salad?

You could make a yummy lettuce wrap, but I wouldn't just throw all of this into a bowl as a salad, all of the crisp veggies are really good because they're on the soft bread. Make the Thai Chop instead!

How long would you keep the avocado & bean spread? I can't remember how long ago I made it 😆

give it a sniff, but I feel like 7 days max because of the avocado...

Yay! Just remembered it was Sunday so I'm good 👌 🎉

This was so delicious but don’t use the sun dried tomato focaccia from TJs- falls apart/crumbles when you try to cut it and was weirdly doughy? The actual ingredients were delicious !

ugh what a bummer!!! it looked so good I was excited to try that one. def use the herb focaccia next time you make sandos, its sooo good!

Just made these for the car ride between tightly-spaced wedding dress shopping appts tomorrow. Fingers crossed they’re the magic dust that help friend find her dress!!

Total time crunch for lunch, didn’t have the onions pickled already, blender was dirty, food processor broke, etc. All I had was hummus, mixed greens, cucumber, sprouts and turkey and it’s one of the best sandwiches I’ve ever made. The salt step is can’t miss, total game changer! Extra excited to make this as originally designed now.

Made this with turkey for a road trip. Easy to eat if you are the passenger princess with both hands...not so much if you are the driver. Kept the spread in an airtight container at home which my man has been dipping EVERYTHING in all week, I’m talking tortilla chips, pretzels, carrots, his fingers, etc. Best sandwich I’ve ever made!

Really delicious! Is there a good more carb friendly option that you would recommend? Maybe some kind of wrap? Thanks

Oh my stars people, do not sleep on making this sandwich!!! I made it exactly as the recipe calls and I wouldn’t change a thing. At first, my carnivore self couldn’t help but imagining what meat or cheese I would plan to add but... NOPE. We are keeping this one exactly as written. Fabulous

For the GF people, Schar makes a ciabatta that is fluffy and soft. It’s individually sized, but it would still get the job done for the small modification. Check out this product on Thrive Market: https://thrivemarket.com/schar-ciabatta-bread
