I can't wait to try this recipe! I love sheet pan chicken and potato meals🙌. Would broccoli or napa cabbage be a good addition to this meal somehow? I harvested some from my garden yesterday, and would love to use one of them.

Ooh yes absolutely! I love roasted broccoli - just add to the pan with the chicken after tossing in a little olive oil and a little salt and pepper. Roast for about 20 minutes until lovely and crispy. For the cabbage I love it pan fried in a little oil until soft but still with a bit of crunch and serve alongside. Delicious! xxx

This is great too! Thank you!

slice the cabbage into 2-inch thick wedges and roast on the baking sheet with the potatoes and chicken! Or instead of potatoes!

Ok I added broccoli and Napa cabbage...amazing! Not all of the cabbage fit, so I sautéed the rest in butter and garlic. Absolutely amazing meal. Will make again.

I have a whole roasting chicken in pieces in the freezer. Would this be an option to use instead of just thighs?

Expand full comment

Yes! The breasts will cook a bit faster, use a meat thermometer starting at 40 minutes and just pull them off when done!

If I cook whole legs, will it increase the cooking time?

Expand full comment

It will likely be a similar cooking time depending slightly on the size. They should be nice and crispy on the outside and clear juice should run when you poke it with a knife - no sign of pink. If you do give them an extra 5-10 minutes they are unlikely to overcook - legs and thighs are very forgiving xx

Is Romanesco supposed to be hummus consistency? I thought I should maybe warm it somehow, but the directions didn’t call for it…

Turned out perfect for the same time!

Made this for the British in-laws tonight and it was a DREAM. I panicked halfway through bc I realized I essentially made half a Sunday roast 😂 but when I got all the sauces and extras on there it was SO much better!

Oh my goodness I love this comment! So pleased you loved it and sorry for the panic! It’s all about the little finishing touches 👌💛 xxx

Made this last night! It was delicious! Even the "I don't like red peppers" members of my family didn't notice the red peppers and practically drank the Romanesco sauce. SO GOOD!

This makes me so happy! 💛💛

How is this so simple yet so delicious?! Two lemons and a butter sauce. Gonna add that to everything from now on.

Expand full comment

Literally butter and lemon can do it all

This was amazing. That romesco sauce is crack.

Do you have any non-nut almond substitute suggestions?

Expand full comment

Hi Lily! Ooh yes sunflower seeds or hemp seeds would work well, or a mix of the two xx

Expand full comment

Came here to ask the same! Would the sauce be just as well without a nut replacement or would it come out weirdly?

Expand full comment

I think it would still work with without - the nuts add texture but to be honest even without the nuts the sauce you’re left with would be nice tossed through pasta too. Xxx

Beautiful, thanks!

Yeah it'll be more of a smooth sauce versus a chunkier pesto-y consistency. It'll be delish!

Expand full comment

We have a nut allergy - and I was out of sunflower seeds - so I used Caro’s trusty pepitas in their place and can confirm it was delish!!

Expand full comment

I made it without any seed replacement and it was great too! I think it’d be a great pasta sauce sans nuts.

How would I add some greens to this?

Expand full comment

This was SO good! I skipped the garlic butter part because I just loaded the potatoes/chicken with butter pre-bake and then I broke up BURRATA all over the top and now I’ve died and gone to heaven.

I’ve been blanching my almonds for this recipe- is this necessary?

Expand full comment

no!!!

FYI for a shortcut! Trader Joe’s makes a “roasted red pepper, almond and pecorino” spread which I used tonight and it was glorious! Also did the veg option of chickpeas and broccoli!

brilliant

Somehow hadn’t made this recipe and now it has to be one of my favorites. Everything was so melty and delicious. My in laws LOVED it and they tend to be more particular and less adventurous with their food choices.

I made this 3 times the week it was released. The sauce. The sauceeeee!!! 🤤🤤🤤🤤

My husband got sun dried tomato halves in a bag, not oil packed. Will they still work but with a little extra oil?

Expand full comment

Yes! Prob won't even need extra oil

Ty!! This came out so good (with chick peas) I love how the tart sauce makes the potatoes taste so sweet and creamy! Even was a hit with my 3yo!

This was amazing!! Made it on a trip after a day of skiing and even the picky eaters in the group devoured it! For sure going in the regular rotation! Thank you!
