I can't wait to try this recipe! I love sheet pan chicken and potato meals🙌. Would broccoli or napa cabbage be a good addition to this meal somehow? I harvested some from my garden yesterday, and would love to use one of them.
Made this for the British in-laws tonight and it was a DREAM. I panicked halfway through bc I realized I essentially made half a Sunday roast 😂 but when I got all the sauces and extras on there it was SO much better!
Made this last night! It was delicious! Even the "I don't like red peppers" members of my family didn't notice the red peppers and practically drank the Romanesco sauce. SO GOOD!
FYI for a shortcut! Trader Joe’s makes a “roasted red pepper, almond and pecorino” spread which I used tonight and it was glorious! Also did the veg option of chickpeas and broccoli!
Somehow hadn’t made this recipe and now it has to be one of my favorites. Everything was so melty and delicious. My in laws LOVED it and they tend to be more particular and less adventurous with their food choices.
This was amazing!! Made it on a trip after a day of skiing and even the picky eaters in the group devoured it! For sure going in the regular rotation! Thank you!
Another family hit! I used the pork tenderloin sub and threw in a bag of baby carrots in with the potatoes! Next time I think I’ll also throw in a head of torn kale at the end and throw it under the broiler to crisp in the tasty marinade that was under the veggies. 10/10!
Made this last night and LOVED IT, especially the romesco sauce. I’m not even a huge roasted red pepper fan but this was addicting, I couldn’t stop tasting it while the chicken was cooking.
For those with nut allergies, sunflower seeds worked great instead of almonds. I used the sauce on sourdough topped with avocado this morning and it was incredible. Thanks again for another great recipe.

I have a whole roasting chicken in pieces in the freezer. Would this be an option to use instead of just thighs?

My husband got sun dried tomato halves in a bag, not oil packed. Will they still work but with a little extra oil?
