I can't wait to try this recipe! I love sheet pan chicken and potato meals🙌. Would broccoli or napa cabbage be a good addition to this meal somehow? I harvested some from my garden yesterday, and would love to use one of them.
Ooh yes absolutely! I love roasted broccoli - just add to the pan with the chicken after tossing in a little olive oil and a little salt and pepper. Roast for about 20 minutes until lovely and crispy. For the cabbage I love it pan fried in a little oil until soft but still with a bit of crunch and serve alongside. Delicious! xxx
Ok I added broccoli and Napa cabbage...amazing! Not all of the cabbage fit, so I sautéed the rest in butter and garlic. Absolutely amazing meal. Will make again.
It will likely be a similar cooking time depending slightly on the size. They should be nice and crispy on the outside and clear juice should run when you poke it with a knife - no sign of pink. If you do give them an extra 5-10 minutes they are unlikely to overcook - legs and thighs are very forgiving xx
Made this for the British in-laws tonight and it was a DREAM. I panicked halfway through bc I realized I essentially made half a Sunday roast 😂 but when I got all the sauces and extras on there it was SO much better!
Made this last night! It was delicious! Even the "I don't like red peppers" members of my family didn't notice the red peppers and practically drank the Romanesco sauce. SO GOOD!
I think it would still work with without - the nuts add texture but to be honest even without the nuts the sauce you’re left with would be nice tossed through pasta too. Xxx
This was SO good! I skipped the garlic butter part because I just loaded the potatoes/chicken with butter pre-bake and then I broke up BURRATA all over the top and now I’ve died and gone to heaven.
FYI for a shortcut! Trader Joe’s makes a “roasted red pepper, almond and pecorino” spread which I used tonight and it was glorious! Also did the veg option of chickpeas and broccoli!
Somehow hadn’t made this recipe and now it has to be one of my favorites. Everything was so melty and delicious. My in laws LOVED it and they tend to be more particular and less adventurous with their food choices.
This was amazing!! Made it on a trip after a day of skiing and even the picky eaters in the group devoured it! For sure going in the regular rotation! Thank you!

slice the cabbage into 2-inch thick wedges and roast on the baking sheet with the potatoes and chicken! Or instead of potatoes!

I have a whole roasting chicken in pieces in the freezer. Would this be an option to use instead of just thighs?
Yes! The breasts will cook a bit faster, use a meat thermometer starting at 40 minutes and just pull them off when done!

We have a nut allergy - and I was out of sunflower seeds - so I used Caro’s trusty pepitas in their place and can confirm it was delish!!
I made it without any seed replacement and it was great too! I think it’d be a great pasta sauce sans nuts.
