Wow, this is my first time cooking one of your meal plans, and these dinners were all winners!! I’m a pretty experienced cook so I never thought to try a meal plan (I’ve always thought - I can just figure it out myself) but now I appreciate the beauty of benefiting from the hard work YOU have done in putting this together!! Being a mom is hard work, thanks for making my life a little easier (and more tasty)!
Two for two this week already! My son absolutely housed the sheet pan chicken and potatoes (not the artichokes 🙄) last night and went back for seconds! I wasn’t gonna make the salmon dish because we didn’t have salmon but we did have random cooked shrimp in the freezer so I just thawed them and warmed in the sauce. And made crispy tofu for the non shrimp eater. Everyone was happy! Especially me 😀
I stepped away from instagram at the beginning of October for my mental health and have missed seeing what you’re cooking (and the shenanigans of those cute babies of yours) but when this dropped into my inbox I realized it was time to upgrade to paid and do a full meal plan! I’m excited for this week of food! Also, excited for the next installment of 4th wing, are you!?
Really appreciated this meal plan. It was nice to just show up at the grocery store without needing to do much planning. I appreciated the tips like make the sweet potato at the same time as roasting something else. I also liked that we used up most of the ingredients (or tips on what to do with the odds and ends), as I always feel bad about languishing partly used ingredients that are sitting in my fridge. Felt like I ate a lot more vegetables than my recent eating habits, which was also a nice bonus.
This is fantastic, thank you Caro!! One bit of bad news, at least in Minnesota, Trader Joe’s has discontinued their frozen artichokes😩I love those things
Cooking for 1 end-of-week report in case it helps anyone else! :)
I recommend buying just 2 sweet potatoes instead of 4 because you'll have a lot of leftover baby potatoes from night 1 that you can add to your lunch salads. I ended up burning my sweet potatoes for the salad because I assumed they'd roast for as long as the sheet pan chicken. Whoops! I had to throw them out -- and I still had PLENTY of leftover potatoes for 2 days of lunch salads.
I didn't make the noodles yet and had leftover chicken instead on that day, you could maybe skip the noodle ingredients or the salads because your leftovers will be more than sufficient.
I would say you can skip doubling the salad dressing, I made 2 salads as instructed and have over half a jar of dressing left -- not a bad thing, but you prob don't need the doubled amount.
At the end of the week, I had 4-6 meals of leftover soup, curry, and taco meat in my fridge (love eating these for the weekend/Monday lunch) and 5 meals of leftovers in my freezer (gift to future self).
I might start halving some recipes or leaving out some lunches but I just love Caro's salads too much! :)
Just went on a trip with family and we used this meal plan! It was great to be able to cook at the house and buy stuff knowing it'd get used up in the next few meals rather than letting stuff go to waste. We had 5 adults, a toddler and a baby and everyone loved it all!
Anyone else tempted to just chop up their leftover chicken from day 1 & dump it in the soup tonight (day 3)?? I have a lot of leftover chicken — think I’m gonna try it!
Absolutely!!! Great idea. Since it’s precooked it’ll only need to simmer for 10-15 min to absorb the flavors — so add it about halfway through the simmer time!
I’m 2/2 on these dinner and so far, so delicious. I struggled a bit with the sauce for the salmon, though—it thickened a bit when I cranked the heat at the end but never really coated the salmon. I thought when I then turned OFF the heat it might thicken more, but it separated instead. Again, still tasty, but I don’t think it did what it was supposed to. Tips welcome! 🙏
Also came here to ask—would you ever publish a menu like this that flags or asterisks the lunch ingredients in such a way that it’s easy to skip purchasing those? I loove to do the dinner recipes but lunch is typically at the office or needs to be incredibly speedy—no time to cook, alas!
It all looks so good! My husband won’t eat the salmon (more for me!) but I can just toss some chicken in for him next to the salmon and call it done. Awesome!!! 🥰

I did that! Partially because I forgot to set any aside for the soup! It was good, and the soup was fast.
