My parents were visiting this week, and my mom has several food sensitivities including gluten and honey/maple (fructose) - this menu made my week so easy. Every one of the meals wowed the family (or at least some percentage of them...always a gamble with kids). My mom was able to eat everything we ate with some very minor substitutions, most of which were already suggested in the recipes. Thanks for simplifying my life and keeping it delicious!
I did one of your meal plans for the first time ever last week using this guide! We were so burnt out from meal planning and have been having way too much takeout lately. Reading the recipes for this week’s plan had me so excited and it made our week so simple! Loved the consolidated grocery list and we even found some new favorite recipes that we hadn’t tried before (balsamic basil grilled chicken & side salad!!)
Started with the fish taco bowls tonight and my in-laws (who live on a tiny island but supposedly "don't like fish") enthusiastically took second helpings, my husband raved about how amazing the rice was, and my toddler ate multiple spoonfuls of both rice and fish (win!). Will definitely be making it again! And feeling pumped for the rest of the week.
Last week, I made the marinated veggies with burrata but used the homemade Caesar dressing from a recent newsletter. Then we served it with grilled steak. It was AMAZING!
My husband did the grocery shopping and even though “tenderloin” was on the list and we have “pork tenderloin” all the time, he … came home with a giant a** pork loin. I don’t even know what to do with it.
This all sounds so good! I also just want to thank you SO much for always having the best substitution notes for all of your recipes. My son has several severe food allergies, and yeah, I know most of the substitutions out there by now, but you make it so easy when I really don’t feel like cooking and thinking about all the subs and which would be the best. Even if one of my son’s allergens looks like the star of the recipe, I know you will have an excellent replacement in the notes. Thank you thank you thank you! You make meal planning, cooking, etc easier and everything is delicious!
I can't wait to try some of these!!!
These are some of my favorite WTC meals… the balsamic chicken marinade + dressing is in our regular rotation and I never tire of it!!

Great recipes and pretty healthy. I will look forward to adding them to our menu for next week.
