Made this last night with salmon(because it's what I had!). Curious what type of parsley you recommend? Or if anyone else has input! I used italian parsley.

Curly or flat leaf work here, I prefer flat but it doesn't really matter so I left out a designation. Tell me more what happened

Instead of cutting off the woody part of the asparagus, can I just snap them? Is it true that they snap where the natural break in the stem is…?

It is true! Just takes longer and at most you're losing like a centimeter of good asparagus so I just cut them all in one chop.

Soooo good! I don’t love tomatoes but I loved them in this recipe! And one of my kids kept asking for more “chicken” (I used frozen tilapia). 😆 I will definitely add this to meals I want to make again.

So easy, soooo good, all 3 kids loved it! Will definitely make again. Did string beans instead of asparagus and had frozen grape tomatoes from the garden that actually worked fine. Quinoa. Thanks Caro!!

This recipe is so underrated, based on the number of comments! I made it using flank steak instead of fish (sorry!) and IT IS SO GOOD. The sweetness of the tomatoes really complement well the chimichurri. The instructions on how to slice the flank steak were crucial, thank you. My husband said “this is my new favorite steak recipe” — and he doesn’t like beef. Another win!

Made this with halibut and Costco pesto (I was feeling burnt out and had it on hand — an excellent swap). Instead of rice, I just roasted quartered red potatoes on a separate sheet pan. Really nice recipe even when you’re not making the chimichurri — more of a dinner template/idea, which I find so handy!

Yes! Add everything, then pulse pulse pulse until it's finely chopped.

The tomatoes make the meal, in my opinion! A bite of chimichurri-covered fish with one of those tomatoes…incredible!

So I’m not gonna lie. I totally cheated and used pre-made chimichurri from Trader Joe’s. While I’m positive your recipe would have been a million times better, this was still a winner! I love how easy and adaptable all your recipes are.

Very good! The next night we put leftover brown rice/quinoa pack, tomatoes and asparagus with grilled lamb chops and the chimichurri drizzled on everything!! delicious!!!

We had leftover chimichurri from steak night and this was perfect! After dinner while I was cleaning up there was a bit of a lingering fish smell, so I boiled a cup of water with a few tablespoons of distilled vinegar in it, and the smell was gone by the morning
