TRULY OBSESSED! so good and easy! I have learned I am wimpy with salsa verde spice levels so the mild Herdez brand worked great (still super flavorful with a little heat). This was my first time cooking with ground pork and it was awesome.
This was SO good! I had leftover Carnitas (the pre-cooked kind from Costco) and just use that instead of ground pork and followed exactly and it was AMAZING. I prefer pulled pork over ground so this was a great swap, short cut bc all i had to do was break up the meat, AND the texture was amazing mixed with the verde sauce and sour cream! WINNER!! My husband had two platefulls! I love the easy clean up/minimal dirty dishes!
Tips on making a larger batch? Could I just use two skillets and bake at the same time (seems like the obvious answer—but do I need to swap them on the racks halfway through or allow more baking time?)
So delicious! Would work well with any ground meat for sure. Chopped up a zucchini in it. Next time I think I would skip the cheese inside and put more on top. Make sure not to add too much salsa into the mixture- takes a while for the liquid to cook out, and you need to leave enough for the outside!
WOWWWWW I don’t usually comment but am so compelled to just let the world know this enchilada is THE BEST woweeee. Told my kid these are *too spicy* so I can have more to myself hehe
Wow, wow, wow, these were so good! We didn't have coriander so my husband used yellow curry powder. We are adding these to the rotation for the fall/winter!
Another winner in our house. My husband detests enchiladas, but he had seconds of these!

My local store never has just ground pork..would a combo of ground pork/beef be better than ground turkey
Made this tonight and it was great! My 2 year old ate it and kept shouting, “Yummy quesadilla!”. Will definitely make again.
Another hit! Delicious and so easy. What to Cook has improved my weeknight meal game 100 fold, thank you!
Any thoughts on making ahead and freezing? Wanting to make ahead to stock a freezer for a friend who's about to have a baby.

This was a fan favorite in our house - came together quickly and it was so delicious!! Swapped spinach for frozen corn.
I just tried the pork before assembling the enchiladas and screamed HOLY SHIT. WHOOAAA love these!
When using the can of crushed pineapple, should we drain the liquid first or use combo of juice and pineapple pieces?

Instant classic! And easy to boot.
