TRULY OBSESSED! so good and easy! I have learned I am wimpy with salsa verde spice levels so the mild Herdez brand worked great (still super flavorful with a little heat). This was my first time cooking with ground pork and it was awesome.
This was SO good! I had leftover Carnitas (the pre-cooked kind from Costco) and just use that instead of ground pork and followed exactly and it was AMAZING. I prefer pulled pork over ground so this was a great swap, short cut bc all i had to do was break up the meat, AND the texture was amazing mixed with the verde sauce and sour cream! WINNER!! My husband had two platefulls! I love the easy clean up/minimal dirty dishes!
I know your Notes say bake and then freeze in a bag. I’d prefer to just freeze in the dish we’re baking in. Do you still recommend baking first? We’d thaw or partially thaw before putting in the oven.
oh yeah that's more for leftovers. if you want to assemble then freeze for later, no, you can just sprinkle the cheese on top, cover and freeze. then bake from frozen at the same temp, just for longer!
Tips on making a larger batch? Could I just use two skillets and bake at the same time (seems like the obvious answer—but do I need to swap them on the racks halfway through or allow more baking time?)
So delicious! Would work well with any ground meat for sure. Chopped up a zucchini in it. Next time I think I would skip the cheese inside and put more on top. Make sure not to add too much salsa into the mixture- takes a while for the liquid to cook out, and you need to leave enough for the outside!

DELISH leftovers. good in the fridge for 4 days, or freeze before baking and then bake from frozen, adding 10-15 minutes to the bake time!

build the enchiladas in a large baking dish instead of two skillets!

This was a fan favorite in our house - came together quickly and it was so delicious!! Swapped spinach for frozen corn.
I just tried the pork before assembling the enchiladas and screamed HOLY SHIT. WHOOAAA love these!
