We go to California from the east coast every January for a week and one of our go to meals is the Sheet Pan Spring Salmon. I find it super easy with rental house supplies and it is an easy win for our young kids. It’s also easy to scale for the addition of grandparents. Sometimes I sub out the asparagus to green beans or broccoli based on wha is available.

This came out on the last day of my winter vacation, so I had to make my own plan — I premade the chicken tiki masala stew, made the chicken parm sliders from the book, and of course the “leftover” ham and cheese biscuits from instagram for breakfast one morning! Everything I contributed was a huge hit. Caro for the win!!

Love this!! We just recently did an extended family ski trip. I cooked the beef ragu on my cooking night. I did have to bring my own immersion blender and Dutch oven just to be sure I had it but otherwise SO easy and warm and cozy. I doubled the recipe. Put it in the oven in early afternoon and cooked for about 3 hours and then just turned the oven off and left it in there. We went night snow tubbing that night and planned to eat when we got home. I pulled it out of the oven once we were home. Blended and shredded, cooked the noodles, and served with a simple salad and sour dough. It was such a win!!
