Love this! My parents started hosting an annual Kentucky derby party to find something to celebrate and host since all of their friends hosted the other “holidays”. This went on for about 30 years until my mom passed away and then Covid put a temporary pause on things. We haven’t hosted one in the last couple of years but I may have to bring it back with this menu!

How would you recommend to substitute out the mustard in the chicken salad sandwich’s or the deviled eggs?

Hiii!! We have a derby party every year and I'm going to use this menu, but I need some advice! Our party will have about 60 people, so I'm trying to decide how many times to multiply Caro's portions... we'll also have a couple of spiral hams, costco mac and cheese ("for the kids"), cheese grits, and beer cheese because they're Derby Day must-haves around here. Do you think 3x would be enough and/or would you make more of certain things than others? Thank you!! cannot wait to try these!

Well I totally thought this was going to be a partnership with the Masters ⛳️! 🤣 Nonetheless, it was perfect timing for Masters weekend & I made the deviled eggs & chicken salad! A salt & vinegar chip with a deviled egg & mango chutney in chicken salad are now non negotiable for me going forward. So insanely delicious. Thank you for these absolute keepers - they are going on recipe cards! 🩷

Louisville native here that hosts a derby party each year! I love these ideas!! I already do a hot brown slider, but the benedictine chicken salad sounds like a perfect addition to my spread. Thanks as always, Caro!

So fun! We host the derby party of Caro's dreams every year, and this will freshen things up!! My biggest don't-feel-like-cooking tip: buy the pre-boiled, pre-peeled eggs. They're usually perfectly cooked and save soooo much time. (I get mine from Costco for the best price, but most grocery stores sell them, too.)

I probably won’t be hosting a watch party but this all sounds yummy enough to cook for myself! (Not all at once LOL, but I love chicken salad croissant sandwiches and this seems like it would be a tasty new version.)

Rookie question - does covering the chicken with an inch of water mean an inch *total* or an inch *above* the tops of the chicken?
