Ok I made a version of this tonight using Heyday coconut curry chickpeas + sautéed canned pumpkin + frozen riced cauliflower + kale and it was so great!!!
I really appreciate the recent emphasis on affordable cooking! Some recipes in the past were a bit too pricey for me to pull off comfortably, but this is the perfect recipe for these tight times. Thank you!!
Soooo what if my due in 4 days pregnancy brain read "UNCOVERED" and thought "weird, we normally cook things uncovered", proceeded to cover, and now it is really thin? Crank the heat and let it go longer?
I know it's too late but the answer would be yes!!! That's the move anytime you want to make something thicken quickly — crank the heart up and stir constantly. Will be thinking of you this week Holland!!
My one year old crushed this. My husband and I loved it. My four year old took one bite, declared she liked it, but refused to eat more. I call that a win!
Can a person substitute Penang curry in this do you think? I see you have yellow curry listed as a substitute. I wonder are all curry seasonings able to be substituted?
Great question. I originally wrote this as a super quick simmer. It was good -- but the chickpeas don’t have time to soften or absorb the broth. They’re still really firm and flavorless. The longer simmer makes it so so much more delicious!

Cube them and this amount of time will still be great!!
I take this back -- 10 minutes high pressure with a natural pressure release!
Love the slow cooker and pressure cooker additions to the notes. You guys are crushing it. Also loving the cook once eat twice idea!
