I made this, this evening - added some yellow squash for color and a mix of herbs. Mixed Trader Joe’s hot honey with Dijon, for the sauce - Quite the fresh and satisfying spring dinner!!

This was fantastic. If anyone is looking for a wine pairing, this is great with a vinho verde!

I made this! Swapped peas & corn for zucchini & green beans (chopped) and cooked everything together at the end. It was delicious. I made it with fresh cod which turned out great as a swap.

This looks quite delicious! I have always used scallions raw, but started sauteing them this winter and it's a revelation. I can't bring myself to invest in halibut for my and my four kiddos (some day!) but they do love cod, so will be trying this with Cod this week. Yum!

Does California have a Farmers Market all year round? We only have it from Mid April-November here (Maine!) since it gets so wintery but how dreamy it would be to be able to wander outside at the market with fresh farm veggies all year round!

A lot of places in CA do have farmers markets year round. Especially in southern CA.

I always soak the vacuum sealed packages in water. I think the freezing process causes it to release extra water as it thaws (that’s why freezing tofu is such a good hack to remove excess moisture) so you might have to use extra paper towels to dry it well after thawing.

Similar question - can I use frozen halibut? Any tips to make it crispy?

Molly from What To Cook's avatar

Definitely! Thaw it overnight in the fridge and pat it dry before cooking to help make it crispy

What to cook when you don't feel like cooking but want a gourmet meal!!! So delicious, easy, and fresh. I got halibut from the fish market which was a splurge but all the other ingredients are so cheap and convenient it felt worth it. Do want to try with frozen and thawed fish next time. This is such an impressive meal, I'm so glad I made it!!!

I made this with branzino filets from Trader Joe’s, yum! The fish was crispy and lovely to eat. We tossed in some of the veggies with farro we had from another dinner, and it felt like a great, hearty bowl.

This was delicious. Made it last night with salmon, and I didn’t have basil so I chopped up leftover parsley, dill, and mint from Gabby Dalkin’s Greek lamb meatballs (strong recommend also!) last week. Love how adaptable this is. My kids got salmon, peas and corn in their separate plate compartments, and my husband and I ate it all together with the herbs and the honey Dijon.

I’m so picky with fish- but I’m willing to try! Would walleye work? Or is that not the right kind?

Cod or haddock are both really mild in flavor if you're sensitive to a "fishy" taste! I started my kids off with these two fish and they've since worked their way up to the "Stronger" tasting fishes We're going to try this recipe with cod!
