Okay i love this recipe already. We made your crispy chicken flautas this week and they were a predictable hit with my kid. But here’s my dilemma - most of the tortilla brands available at grocery stores are super processed. We’ve found one amazing brand that is isn’t (s/o Vista Hermosa) but they only come in one size.
Has anyone found a clean ish tortilla brand that comes in street taco size?
Not sure exactly what you’re looking for in terms of clean-ish but surprisingly Walmart (via their market side deli brand) makes their tortillas in their bakery! Ingredient list: wheat flour, water, palm oil, salt, sugar, yeast.
I used corn tortillas because ordering groceries on a phone is always hit or miss. They are yummy but have a mind of their own! Also used lean ground beef because it’s what we had - yum!! It was all prepped and in the oven before (a pathetic) nap time was over. 10/10!
I think we used 93/7 or something outrageous that we had in the freezer. It wasn’t greasy but I did let it cook longer to let that all get out? If that makes sense. I think it helped crisp up the tortillas, too. probably would flip them an additional time next time.
Yes, I believe the meat goes in raw! Check out the little video clip! It shows the meat going in raw and her opening one of the baked tacos to show the meat cooked through inside. I think there’s little enough meat (like a meatball) that it cooks through inside the taco!
Made these Monday and they were mostly a hit! I did half flour tortillas and half corn - the corn worked fine with our little microwave tortilla warmer and were my preferred of the two. My corn-averse 9yo liked them until he had too many bites of corn, tried to pick it out and somewhat failed. Next time I will make him a few tacos without before adding the corn to the meat mixture for the rest. He and my husband both preferred dipping theirs in tomatillo salsa over the white sauce. This meal served all three of us for a dinner plus leftovers for three additional lunch servings. So good!
I made this with some edits based on what I had, and it was so delicious! Sharing in case anyone else wanted to riff on the recipe. All seasoning the same with:
half a rotisserie chicken from Costco, shredded
1 can of Rotel diced tomatoes with green chilis (drained)
Rolled these up flauta style to get my 4yo to eat them…the whole family LOVED them! Even my husband who hates chicken. Our 7yo said “if I had three thumbs, I’d give you three thumbs up!” Thanks for giving our family so many delicious meals to enjoy!
I just made this for lunch and yum!! Raw chicken was perfectly cooked after 20 minutes in the oven. This recipe is a keeper!

As a follow up, the leftovers, reheated in the air fryer, are INCREDIBLE!! Caro, this alone may persuade you to finally get an air fryer😉

I bake quesadillas in the oven on a sheet pan so I can do a bunch at once. My family loves them
We've started making ours on our griddle pan so we can make more than one at a time. Love the oven method!

I did, I think it worked great! I only baked for 10 minutes because the chicken was already cooked. I used about half a rotisserie chicken.

Yeah for me it’s any ground poultry, even chicken and turkey pre-cooked meatballs and sausage just don’t do it for me!

They snap in half but it kind doesn't matter right?? Like they're ugly but taste good lol. You can see in my video mine snapped too!
