This is exactly how I meal plan! A breakfast, good all week lunch, and 3 dinners. This week I did your car meatballs for breakfast , lemon-parm kale quinoa salad for lunches (my high schooler actually requests this ππ») and for dinners your broccoli cheddar chicken pot pie, healthy sloppy joes and Jennβs recent Greek sheet pan gnocchi. It makes the week go soooooo much smoother. Iβll be using this one next week- thank you!
Very excited about this meal plan! Thanks for taking the hardest part of cooking- the thinking and planning -off my plate this week. Quick question: I loathe thousand island dressing. Is there another dressing that you would recommend for this salad? TIA!
Enchilada stew is calling my name as a good freezer-stashing meal to enjoy during busy nights this fall. Should I freeze without the cream cheese/shredded cheese added and then add when I reheat at a later date?
I prepped the salad, stew, and egg bake this morning in amongst our usual weekend-morning-around-home stuff and now itβs noon and I have three full meals to eat all week!!
Gosh it really is a lot once these babies start to eat at much as the rest of us lol. Not yet but that's a good idea!! Though a baby could eat everything on this meal plan (use sugar not honey!) just cut up into little baby bites!!
Love the chicken stew! I've eaten it 3 times this week, a fab generous recipe. The third time I added cooked rice to the soup which was a great addition.
Made the delicious enchilada stew today, added 2 extra chicken thighs and then kept some of the shredded chicken back for adding to lunches this week, worked great!
Just wanted to report back that it was FANTASTIC. I wondered to myself "it can't be this easy, surely I should cook the chicken separately, do I really just put it all in the pot?!" and the answer is YES, it really is that easy and that good, and no you do NOT have to re-engineer the recipe, it's perfect as-is. We added cilantro and tortilla chips and everyone had seconds!
I opened this at just the right time. Feeling burnt out (already) of meal prepping, but craving some structure. Committing to this meal plan prep over the long weekend! and crossing my fingers my littles eat some of this :)

For the best consistency yes, that would be ideal!!
I made it as written with the cream cheese and shredded cheese and frozen it, it's come out just the same and so delicious
